"Cheezy" Mac

The ultimate comfort food. Veganised!
  • Half Butternut Pumpkin
  • 1 Medium Carrots
  • 1 White Potato
  • 1 Onion
  • 4 Cloves of Garlic
  • Coconut Cream and or Vegetable Stock
  • 1 cup Raw Cashews (Soaked)
  • 1/2 cup Nutritional Yeast
  • 1tsp Smoked Paprika
  • 1tbsp English Mustard
  • Salt and Pepper to taste
  • Chilli Flakes to serve
  • Cooked Pasta
Soak Cashews in hot water for 30 minutes.
Cut all produce and oven bake until soft. 200'C Fan Forced. (I leave the skin on as it contains the most Nutrients and Minerals. Full flavour also remains by choosing to roast instead of boiling.)
Cook pasta.
Blend all ingredients until smooth. Or at a consistency that you prefer.
Mix through.
Top with more Nutritional Yeast. Serve with fresh chives and parsley. (More Salt and Pepper to taste.)
*Spinach can also be stirred through. 
*Sweet Potato can be used instead.
*Mushrooms can be added.
*Can be oven baked in a tray, topped with breadcrumbs; to become a bake. 
The list is endless!

This took me no longer than 30 minutes and I managed it with my 6 month old awake and exploring the floor.
