Pumpkin, Sage and Spinach Gnocchi
This is what I made for Nathan, the first time I cooked him dinner. (In fact, he mentions that fun fact every time I cook it.) He's not a Vegan and still he stayed. Must be an alright dinner dish.
YOU WILL NEED:
- 2-3 sprigs of Sage
- 2-3 sprigs Rosemary
- Chives
- 4-6 Garlic Cloves
- 2 Red Chilli's
- 2 Tbsp Vegan Butter (Nuttelex)
- Olive Oil
- 1 Brown Onion, diced
- Half a Pumpkin (I use Butternut, but preference is up to you.)
- 2 cups Spinach
- Gnocchi (Homemade or Store Bought)
- Salt and Pepper to taste.
This one is super easy and only takes 10 minutes.
Boil a pot of water to the boil.
Meanwhile, in a fry pan, heat a large amount of Nuttelex, until melted and covering the pan. Fry off all other ingredients; aside from the Spinach. Until the Pumpkin becomes soft.
Boil Gnocchi; until it floats.
Fy off cooked Gnocchi, in the mixture already in your fry pan. Add Spinach and a drizzle of Olive oil, and toss until lightly wilted.
Top with fresh Chives and more Sage.
Enjoy!
*Pumpkin can be oven roasted.
*Roasted Solanato Tomatoes are also a great addition to this dish.
