Tofu and Chickpea "Sausage" Rolls

So much better than the "fake (cough cough processed) meats" you find in the grocery stores. 

  • 1 cup Crushed Walnuts
  • Half a Block of Firm Tofu
  • 1 can Chickpeas (rinsed)
  • 1 Brown Onion (diced)
  • 4-6 Cloves of Garlic (I love Garlic and you should feel free to use as much as you bloody want)
  • 1tbsp Olive Oil
  • Smoked Paprika
  • Nutritional Yeast
  • Parsley
  • Salt and Pepper

Blitz all ingredients and shape into puff pastry. (Majority of store bought pastry is Vegan just check the ingredients.) Top pastry with Nuttelex and more Nutritional Yeast. Baked for 25-30minutes in a 180 degrees oven.

I managed to get 4 long “sausage” rolls and used two sheets. I reheated them as needed. They could also be stored frozen before baking.
